
I went to bed last night feeling VERY excited because I knew that the ripe bananas on my counter were reaching their expiration date which meant... BANANA PANCAKES!
I woke up, read some emails, did a quick yoga flow and proceeded to make the pancakes. Prior to doing so, I went down the rabbit hole that is TikTok and spent WAY too much time making a video on how to make these yummy pancakes. While it was quite fun, I realized that the actual recipe was not presented accurately and I wanted to share the full thing here.
As many people know, I am a pancake Q U E E N. I make pancakes almost every weekend and they are the only thing I order when going out to breakfast.
These pancakes are sweet, fluffy, banana-filled stacks of glorious cakes. Cover them in Trader Joes Maple Syrup and some additional banana slices and WOW you will feel good. (If it means anything to you, I tend to go on my longest and fastest runs after eating these pancakes. I think it's safe to say they are energizing).

Hannah Banana Pancakes
serves 2-4 people
time to make: 15 minutes
Ingredients:
4 very ripe bananas, mashed
⅓ cup organic granulated sugar
¼ cup coconut oil
1¼ cups almond milk
2 teaspoons vanilla extract
1 teaspoon cinnamon
2 cups unbleached all-purpose flour
½ teaspoon salt
2 teaspoons baking powder
2 teaspoons baking soda
for serving
maple syrup
2 bananas, sliced into discs
To Make:
In one large bowl, mash the ripe bananas until there are minimal lumps.
Add sugar, coconut oil, almond milk, vanilla extract, and cinnamon. Whisk until well incorporated.
In another bowl, whisk together flour, salt, baking powder, and baking soda. Add dry mixture to wet and whisk until the batter is smooth.
Heat a non-stick skillet on medium heat and grease with cooking spray or coconut oil. Use a ⅓ cup to scoop the batter into the pan and cook for about 2 minutes on each side (or until golden brown). Adjust heat as needed during cooking.
Repeat until all the batter has been used up. Serve with sliced bananas and maple syrup!
